  1. Cumin and garlic are the dominant flavors, used in generous quantities.

A common ratio is roughly 70% lean beef to 30% fatty lamb
or beef fat. Sucuk (pronounced “soo-JOOK”) is a dry, fermented beef sausage popular across Turkey, the Middle East, and the Balkans.
In some regions, recipes for sucuk were passed from one generation to another,
with each family developing its own balance of garlic, cumin, paprika, and pepper.
In traditional markets, butchers often hang rows
of sucuk outdoors where air circulation slowly dries and ferments the meat.

Fill the mass into the casings and make sure that there is trapped as little air
as possible. As soon as the mass arrives in the casing, you can make a knot
at the end. Now put the casing onto your sausage
stuffer and fill the mass into the casings. You can use the Sucuk on Pizza, eat it with
eggs or put it on a sandwich. The meat used is beef with veal or lamb.

Sucuklu yumurta is a simple dish of fried eggs cooked together with sujuk, but sujuk may also be added to other egg dishes like menemen (which is similar to shakshouka but with scrambled eggs instead of poached).

Sucuklu yumurta, which literally means “eggs with sujuk”, is
commonly served as a Turkish breakfast dish. Sucuk was first mentioned in the
11th century by Mahmud al-Kashgari in his Dīwān Lughāt al-Turk as suɣut (as a sausage made by stuffing spiced rice and meat into intestine casing).

In these Central Asian countries, horse meat will
sometimes be used. So, for us, we like homemade, lots of flavour and a firm texture.
He told us to hang it for a few more days before we ate it to get the best flavour and texture.

Later the preground meat is mixed with frozen and ground
tail fat, beef tallow, suet and additives like spices, ascorbate, dextrose and
starter culture. In the Balkans, it’s often called “sudžuk” and tends to be milder, with
less heat from red pepper. Sucuk goes by different names and takes on different characteristics depending on where it’s made.

And then we’ll post our list of recipes that you can try out at home.
Let’s start with the famous street food sandwiches and toasties first
of all. Take a look at our full list of recipes below for lots of
tasty ways to cook and enjoy your sausage. This is made from camel meat and
    – as you might expect – we had this when Fethiye hosted a traditional camel wrestling event.

The result is a firm, flavorful sausage with a high-fat content that’s ideal
for cooking, especially frying and grilling. The mixture is
then piped into natural or plastic sausage casings
and left to dry for several weeks. Turkish cuisine, like the country of Turkey itself,
bridges the Middle East and the Mediterranean, and one of its most representative dishes is a spicy beef sausage
called sucuk (suˈdʒuk). In 2025, Armenia applied for
geographical indication (GI) registration for Armenian sujukh.
Sujuk can be added to many dishes including bean stew (kuru fasulye), filled
phyllo dough pastries (burek) and as a topping for pizza or pide.
Thin slices of sujuk can be pan-fried in a bit of butter, while larger
    pieces may be grilled.
Richly spiced with cumin, garlic, and red pepper, it has a
dense, chewy texture and a bold flavor that sets it apart from European-style cured sausages.

Sucuk is a fermented and air-dried Turkish sausage traditionally made from
beef, animal fat, garlic, salt, and a mixture of spices. During
this curing period, the salt and other spices ferment with the ground meat, creating a chemical reaction that
changes the molecular structure, flavor, and consistency of the meat, and also acts as a preservation agent.
The eggs cook in the spiced, reddish fat, absorbing the cumin and pepper flavors.

While sujuk can be eaten raw, it is typically cooked before consumption. It was reported that
sucuk from Turkey on average contained 24.5% protein, 31.5% fat, 35.65% moisture and 3.80% salt.
Thenceforth the product is filled in casings made of
collagen or fiber and these casings are twisted or tied to portionize
sucuk. Afterwards the meat is mixed with curing salt,
which contains 0.5% sodium nitrite, and stored for 8–16 hours in 8–12 °C (46–54 °F) for further processing.
Sujuk mainly consists of ground meat and animal fat usually
obtained from beef or lamb, but beef is mainly used in Turkey, Egypt, Sudan, Armenia, Azerbaijan, Bosnia
and Herzegovina, Albania, Georgia, Bulgaria, Kazakhstan,
and Kyrgyzstan. Sujuk, sugou or sucuk (/suːˈd͡ʒʊk/) is a dry,
spicy and fermented sausage which is consumed in several Anatolian, Balkan, Middle Eastern and Central Asian cuisines.
